Because clean eating is largely based on fresh produce, cooking ahead isn’t always possible. However, you can start your day off at a rapid pace with make ahead green smoothie packs that just need blended to get yourself out the door and into your day. Berries, bananas, fresh pineapple and spinach can be frozen in a heavy duty Ziploc and blended with a cup of nut milk and plain yogurt for a delicious and quick breakfast.
One fresh avocado can be a terrific base for a delicious dressing that you can keep in the refrigerator for up to three days. For the dressing, you will need the avocado, fresh buttermilk, your favorite fresh herbs, a bit of salt, and rice vinegar.
Once blended, toss this with fresh romaine lettuce. Rinsed chickpeas, sliced cucumber, swiss cheese and cherry tomatoes will top the bed of dressed lettuce for an amazingly fresh combination of flavors. This salad will easily stand alone as a hearty lunch on a lovely summer day.
Fresh cod in an aluminum foil pack is easily dressed up with chopped tomato, fresh spinach and a bit of onion for a flavorful serving of protein that will be done quickly. Once you toss this on the grill, you will have dinner in no more than 9 minutes, so you may want to have your sides ready before your fish goes on the grill!
This caprese salad combines lean, flavorful been protein with greens, chopped tomatoes and fresh mozzarella. Balsamic vinegar dressing adds zing to the whole mix. You can serve this on smaller plates for an appetizer or as a meal. If time is short, marinade the flank steak in fresh garlic and olive oil before you fire up the grill.
Treat yourself to a hearty bread, wrap or pita that suits your taste and load it with a mayo-free hard boiled egg combo based on celery and a bit of olive oil. Once the chopped eggs are blended with salt, pepper and a bit of cumin to taste, this Spiced Egg Salad Sandwich can quickly be served up with fresh lettuce and some sliced tomatoes for a bit of sweetness.
No dairy doesn’t have to mean no creamy sweet treats. Frozen pineapple, fresh mango and a bit of lime juice can quickly be blended for a yummy summertime serving of Pineapple Nice Cream that is both satisfying and clean. If you choose to use frozen mango, be ready to add a bit of water to keep your food processor humming along. Serve as soon as blended and enjoy!
These yummy bars can be made ahead, split into plastic bags and refrigerated to enjoy for the next several days.
