8 Amazing Steak Marinades That Will Rock Your Grill

When it comes to grilling, there’s nothing more frustrating than finding a recipe that will make your steak taste as if it came out of a five-star restaurant.

When creating the perfect marinade for your steak, you want something that will give you the right amount of flavor without overpowering the meat or leaving it tasting too sweet or salty.
Luckily, there are plenty of recipes out there that can help you improve your grilling game—we’ve compiled some of our favorites below!

But first, note this. if you want to cook a good steak, you need a good cut of meat. The best steaks come from top sirloin or rib-eye—make sure that’s what you’re buying before starting the marinating process. Once you have your meat ready, look at these marinade recipes and pick one that sounds good to you.

Top #1: Cajun Steak with Apricot Orange Glaze

Ingredients

2 tablespoons olive oil
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon chili powder
¼ teaspoon cayenne pepper, optional
½ teaspoon paprika
2 cloves garlic, minced
½ teaspoon salt plus more to taste
4 boneless rib-eye steaks (about 1 inch thick)

Directions

In a small bowl, combine the olive oil, Worcestershire sauce, thyme, chilli powder, cayenne pepper (if using), paprika, garlic, and salt.
Place both steaks in a resealable bag or container and pour marinade over the meat.
Turn meat to coat it entirely with marinade. Cover tightly and refrigerate for at least 4 or 12 hours, occasionally turning to coat evenly.
Heat grill to medium-high heat and lightly oil grates.
Remove steaks from marinade, discarding any excess liquid; pat dry with paper towels.
Grill steaks until desired doneness, 3 to 5 minutes per side for medium-rare or 6 to 8 minutes for medium-well done (145°F minimum internal temperature).
Transfer steaks to plates; sprinkle with additional Cajun seasoning if desired before serving with remaining glaze on top of each portion as desired.

Top #2: Tequila Lime Marinated Hangar Steak

Ingredients

2 tablespoons tequila
1/4 cup olive oil
1/2 cup lime juice
3 cloves garlic, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
1 lb hangar steak

Directions

Pour the tequila, lime juice, soy sauce, olive oil, and pepper into a resealable plastic bag. Seal and shake to combine.
Add the steak to the bag and seal tightly. Shake the bag to coat with marinade evenly.
Marinate the steak in the refrigerator for at least three hours or overnight for maximum flavour.
Preheat grill over medium heat for about 10 minutes or until hot.
Remove steak from the marinade with tongs, allowing excess to drip off; discard marinade left in the bag.
Grill until desired doneness is reached but not longer than 5 minutes per side for medium-rare (145°F internal temperature) or up to 7 minutes per side for medium-well doneness (160°F internal temperature).
Allow meat to rest at least 5 minutes before serving, so juices are distributed through meat evenly while slicing into thin slices against grain across the width of the roast on a diagonal angle with a sharp carving knife.

Top #3: Mustard Steak Marinade

Ingredients

1/4 cup olive oil
1/4 cup lemon juice
1/4 cup mustard (yellow works best)
2 cloves garlic, minced
1 teaspoon salt
1/2 lb steak

Directions

Whisk all marinade ingredients in a bowl.
Place steak in a large resealable bag and pour the marinade over it.
Seal the bag and refrigerate for 6 hours or overnight before grilling.
Grill to desired doneness, about 5 minutes per side for medium-rare steaks.
Let the steak rest for 5 minutes before slicing across the grain into thin strips on a cutting board at an angle to create an attractive presentation with your meal.

Top #4: Red Wine Steak Marinade

Ingredients

2 cups red wine (I prefer Merlot)
1/4 cup balsamic vinegar
1/4 cup olive oil
1/4 cup soy sauce, preferably low sodium
4 pieces of boneless steak (I prefer 1 inch thick)
3 garlic cloves, minced (about 1 tablespoon)
1/2 teaspoon salt

Directions

Combine all ingredients in a large Ziploc bag or shallow dish, and refrigerate for at least 4 hours or overnight.
When ready to grill, take your steaks out of the marinade and pat them dry with paper towels.
Brush olive oil on both sides of each steak before grilling over medium-high heat on an oiled grill for about 5 minutes per side (for medium-rare).

Top #5: Basil and Garlic Steak Marinade

Ingredients

1/4 cup olive oil
1/4 cup balsamic vinegar
2 tablespoons chopped fresh basil leaves
2 cloves garlic, minced
4 pieces of beef steak
1 teaspoon dried thyme leaves
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Directions

Mix all ingredients in a large resealable plastic bag.
Add four beef steaks to the bag, seal, and refrigerate overnight, turning occasionally.
Remove the steaks from the marinade, discarding any remaining marinade.
Grill over medium heat for 6 minutes per side for medium-rare or until desired doneness (about 15 minutes total). Rest it before serving. (Basil and Garlic Steak Marinade).

Top #6: Soy Ginger Grilled Flank Steak

Ingredients

2 tablespoons soy sauce
2 tablespoons light brown sugar
2 tablespoon honey
1 – 2 lb flank steak
1 tablespoon vegetable oil
1 teaspoon grated fresh ginger root

Directions

Whisk all ingredients in a bowl and whisk together.
Place flank steak in a large resealable plastic bag and pour marinade over it. Seal the bag tightly, ensuring all air is out of the bag; massage the bag to ensure the marinade coat all the meat.
Refrigerate for at least 4 hours or overnight. Grill over medium heat until desired doneness (about 15 minutes). Enjoy!.

Top #7: Chili-Cilantro Marinade

It’s a marinade that will make your meat delicious but also has anti-inflammatory properties.

Ingredients

2 limes (juiced)
1 – 2 lb flank steak
1 cup cilantro, chopped
1 cup olive oil
1/4 cup chili powder

Directions

Whisk all ingredients in a bowl and mix well until combined.
Pour mixture into a large zip-top bag and add steak.
Seal the bag, making sure there are no air bubbles.
Place bag in the refrigerator for at least 30 minutes, up to 24 hours.
Remove steak from the marinade and grill as desired (1450F medium-rare or doneness 1600F)

Top #8: Jack Daniel’s Grilled Steak

Ingredients

1 pound of rib-eye steak, cut into two portions
1/2 cup of Jack Daniel’s whiskey
3 tablespoons of Worcestershire sauce
2 tablespoons of soy sauce
2 cloves of garlic, minced
1 teaspoon red pepper flakes (optional)
1/4 cup light brown sugar
1/2 tablespoons of Salt to taste
3 whole sweet onions
3 zucchini, cut into rings (optional)

Directions

In a large bowl, combine the whiskey, Worcestershire sauce, soy sauce, garlic, and red pepper flakes.
Add the steaks to the marinade and cover them with plastic wrap.
Marinate your meat for at least two hours in the refrigerator. It will give it time to soak up all of the flavours from the marinade. You can also put the meat on ice if you are short on time, but this will not work nearly as well as using refrigeration.

Allow the steak to rest for at least 20 minutes before the grill.
Take the beef out of its marinade and dry it with paper towels, so it is slightly damp before grilling.
Meanwhile, prepare the vegetables. Season the onions and zucchini with Salt and pepper, drizzle with olive oil, and then grill until tender and lightly charred all over.
