Diversifying your dinners keeps things interesting for the entire family.  Even those in your household that are not keto will love these dishes– without feeling deprived due to a ‘restrictive’ diet or food that tastes bland.

You had us at Instant Pot.  Throw everything in and the pot handles the rest– it doesn’t get much simpler than that.  However, this recipe requires that the chicken be removed after 20 minutes on high.  Once the chicken is shredded, put it back in the Instant Pot and add the spinach and bacon bits.  Give it a few good stirs and let sit for a few minutes to thicken.  The finished product tastes amazing and looks like something that you would order in a fancy Italian restaurant.

Who doesn’t love nachos?  This family-friendly universal crowd-pleaser stays in regular rotation in many kitchens.  What’s wonderful about this keto version is that it doesn’t include chips– but you won’t even miss them.  Consider it more of a baked casserole.  With less than ten minutes of prep time and 15 minutes in the oven, dinner is done in a half-hour!  Pulling a casserole dish out of the oven just screams ‘I spent time and effort creating this from scratch!’
